Madu is a modern restaurant where the concept "Nordic Raw" means that most of the food served is either raw or prepared at low temperatures to enhance and retain the quality of the ingredients.
The concept modernises classic Scandinavian cuisine by mixing old cooking methods such as smoking, curing, pickling with newer ones such as sweeping, halstring and carving. The ingredients used change with the seasons, and are mostly locally produced and organic.
The restaurant is located in Oslo's design hotel, First Hotel Grims Grenka.
